Soup Secrets: Brisk Bisque

If you are a Seinfeld worshipper, the first thing that’ll come to your mind on hearing ‘bisque’ is The Soup Nazi.  Well, we’re going to reveal a lot more about this French soup than the erratic Soup Nazi did. For example, you don’t need the $2 ‘free bread’ with this one because it’s plenty filling on its own!

A smooth, creamy, highly seasoned soup, classically made from a strained broth of crustaceans, bisque can be made from lobster, shrimp or crayfish. In addition, creamy soups made from roasted and puréed fruits, vegetables, or fungi are sometimes called bisques.

In authentic bisques, the ingredients are ground to a fine paste and added to thicken the soup. And, like Julia child pointed out, “do not wash anything off until the soup is done because you will be using the same utensils repeatedly and you don’t want any marvellous titbits of flavour losing them down the drain”, bisque is sometimes made with pre-cooked ingredients that are then pureed.
