Made from cooked, mashed chickpeas, hummus, is one of the most popular exports of the Middle East to the world, along with Shawarma, Baklava and Cheb Khaled of the famous Didi track (if you don’t know who he is, you’re probably too young!). From being a humble dip in Middle Eastern homes, hummus has graduated to a life of fame and notoriety, finding a cosy spot in restaurants all over the world serving Middle Eastern fare. In fact, in Adam Sandler’s You Don’t Mess with the Zohan (2008), one can go so far as to say that the tub of hummus was a prominent member of the supporting cast!
