We hear a lot about gluten these days.In the past, it’s been blamed for everything, from Celiac disease to schizophrenia to excess weight. Now the dust has somewhat settled down, and we’re able to evaluate it clearly. Gluten, for the uninitiated, is an elastic protein found in wheat and its cousins such as rye, barley and so on. It has been found to be directly responsible for Celiac disease, which is an auto -immune disorder of the small intestine, resulting in a bloated feeling. It’s also been thought that those suffering from schizophrenia or autism benefit from a gluten-free diet, though this has not been conclusively proved.
The bottom line is, if you want gluten-free stuff, it’s much better to make your own. So here we are with a collection of gluten-free desserts, a few even dairy-free and flour-free.
1.Gluten-free Carrot Cake:
I have always had a liking for carrot cake, so I selected this recipe as soon as I saw it. I tried it too, and believe me, it’s every bit as tasty as it looks!
2. Chocolate Cupcakes:
A very fit and toned presenter, extolling the virtues of coconut oil and coconut sugar( !)in a cupcake. Marvellous and must-try.
3. Pear Apple Crisp:
Some of the ingredients here may be hard for us to procure, but they can be easily substituted. It certainly sounds delicious.
4. Red Velvet Cupcakes with Cream Cheese frosting:
Lots of fun and dance in this one. That red-hot favourite, made even more special with cream cheese.
5.DIY Bliss Balls:
These are, in addition, vegan and no cook. Can you ask for more? And the presenter is great to look at.
6. Orange Almond Cake:
This cake attracted my attention because it has no flour, butter or oil. And no baking powder or soda. The rise, he claims, comes entirely from the eggs. It certainly seems to have a fine texture, and you can enjoy it without guilt.
7. Healthy Blueberry Cobbler:
Coconut Oil seems to be the new butter these days. And we thought it was old -fashioned and ridden with cholesterol and cardio-vascular disease! Here’s another recipe where coconut oil and palm sugar play a prominent role.
8. Avocado Key Lime Pie:
An unconventional pie crust, made of dessicated coconut, ground pecans and dates, and an even more unconventional topping comprising avocado, lemon zest and, needless to say, coconut oil. It all ends up as a most photogenic dessert, with the lovely green topping, decorated with whipped cream and strawberries.
9. Chocolate Chip Cookies:
You can’t go wrong when there’s chocolate chips in a cookie. Scrumptious and homey!
What has spiralled into a hotly debated point over the years is whether it’s good for all to go on a gluten-free diet. The general conclusion seems to be that those with a proven allergy should definitely axe gluten from their diet, others can do so sparingly. So think and make a smart choice before you cut a whole section of the food pyramid out of your diet – you might just end up with a whole lot of nutritional deficiencies. And no hour-glass figure to show, either.
